Does four-fruit soup really contain only four fruits?
Four-fruit soup is less a fixed recipe than a way of assembling a cooling dessert. Customers choose from fruit, cooked beans, tapioca-like pearls, jellies and other toppings, which are served with ice and a light sweet syrup.
Despite the English name, a modern bowl is not necessarily limited to four fruits, and several ingredients may not be fruit at all. Stone-flower jelly, made from a local seaweed preparation, is one of the textures most closely associated with Quanzhou's summer sweets.
The pleasure comes from contrast rather than richness: crisp fruit, soft beans, slippery jelly and chewy pieces move through the same cold bowl. It is especially useful after a long, humid walk through the historic centre.
